What’s the best local dish you’ve ever eaten while traveling?
The Pateric tells of an elder in a monastery who was given, as a gift, a beautiful cluster of ripe grapes. Instead of eating it, the elder thought of a sick brother in the next cell and sent it to him. The sick brother, in turn, thought of another, older and more weary than himself, and sent the grapes further on. So the cluster passed from cell to cell, from hand to hand, each father choosing to give it away rather than taste it — until, having gone the whole round of the community, the grapes returned, untouched, whole, still fresh, to the elder who had first received them.
I think of this story every time I make rasolnic at home. It’s a dish I once tasted far away, somewhere the road had carried me, and brought back with me to make for the ones at home. I didn’t seek it out for myself — it came to me the way a gift comes, and now I pass it on, at my own table, to those I share it with. Maybe that’s the secret of any good dish: it doesn’t stay good because you keep it for yourself, but because you let it circulate, hand to hand, like the grapes in the Pateric — and the more you give it away, the more whole it returns to you.
